Strawberry & Kiwi Pops
I love how these ice pops look! Full of color! Not only do they look amazing, they taste great! I wanted to make this recipe so bad! I had seen several ice pop recipes with different ingredients: watermelon, mango or raspberry. But since I had lots of strawberries, I set myself to work and use this fruit as my main ingredient. You need a little bit of patience for this recipe; you have to let each layer freeze before adding the next one, but believe me it is worth it!
Apart from being delicious, I was striving for some healthy ice pops. Instead of using sugar or a syrup, I decided to try with agave nectar. Mmm! They are sweet enough but without overpowering the natural sweetness of the fruits. You can use the sweetener of your preference, but remember that the fruit mixture should taste a little too sweet before it’s frozen, because at the end the cold will diminish the flavor.
For the assembly I used plastic cups, they are very practical; once the ice pops are frozen you just cut the cups with scissors and they are ready to eat! Another useful tip is to put the cups in a muffin tin, they won´t move or slip and when opening and closing the freezer you just take out the tin instead of taking cup by cup. Next time I will try to use yogurt containers instead of plastic cups, the problem is that I have to remember to save them before they end in the garbage…That is a big problem for me!
In my house, these ice pops have been the perfect treat for afternoon cravings. The only bad thing is that the recipe only yields 9 pops. Even my dog went crazy for these ice pops, see how she is sticking out her tongue and wagging her tail.
Nothing like a homemade ice pop to beat the summer heat!
- 400 gr (14 oz) strawberries
- 5 Tablespoon agave nectar
- Juice of 1 lime
- Zest and juice of 1 lime
- 150 ml cold water
- 1 1/2 Tablespoon agave nectar
- 1 kiwi
- 50 ml cold water
- 1 1/2 tablespoon agave nectar
- - Wash and disinfect the fruit
- - Arrange 9 plastic cups on a muffin tin.
- - Blend the strawberries, agave nectar and lime juice until smooth. Divide the strawberry mixture evenly among the plastic cups. Place the muffin tin in the freezer and freeze for 2 hours. When the strawberry mixture is slightly frozen, insert a craft stick into the center of each cup; it has to stand up straight. If it falls, let freeze for a little longer.
- - After 2 hours, prepare the lime layer. Mix the zest and juice of the lime with water and agave. Get the muffin tin from the freezer and pour evenly the lime mixture to make a second layer. Freeze again until hard, about 3 hours.
- - Prepare the kiwi layer by blending all the ingredients. Pour the kiwi mixture over lime layer and freeze until solid, about 3-4 hours.
- - When ready to serve, cut the plastic cups and gently pull each ice pop.
