Super Fresh Fruit Salad
For hot summer days nothing like a fresh salad, don’t you think? The method for preparing this recipe is really simple: chop all the ingredients and mixed them. The downfall is that it’s a little time-consuming because of the large amount of ingredients that uses. At least I take a long time preparing it because I’m a little bit obsessive and I like all my fruit pieces to be the same size.
This salad it’s the ideal companion for a barbecue; it contains so many fruits that perhaps all those antioxidants can help counteract the free radicals produced by red meat hahaha. As can be deduced I hardly eat red meat, so when I’m invited to a barbecue I try to prepare a salad so I can take it, share it and not starve.
The portion is quite big, when I make it I usually end up with leftovers but I hadn’t change the quantities because I like having some of the salad for the next days as a snack. Go ahead and play with the amounts and ingredients.
I love that it is packed with fresh fruits, has no creamy dressing and it has zesty spicy note.
- 1/2 red onion, finely chopped
- 1/4 piece of watermelon, chopped and without seeds (usually you can find it cut into quarters at the supermarket)
- 1 jicama, peeled and chopped
- 2 mangos peeled and chopped
- 1 cucumber, peeled, seeded and chopped
- 2 serrano chiles, seeded and finely chopped (you can use chili powder) OPTIONAL
- 1/4 cup fresh cilantro, disinfected and finely chopped
- Juice of 3 lemons
- - In a large bowl put the red onion and sprinkle with the juice of 1 lemon. Let stand for 15 minutes in the refrigerator, so the onion cooks and the flavor weakens a little bit. Meanwhile chop the remaining ingredients.
- - Add to the bowl: watermelon, jicama, mango, cucumber, chili, cilantro and the lemon juice of the remaining lemons. Mix gently until all ingredients are well incorporated.
- - Refrigerate until ready to serve.
