Cardamom & Coffee Crumb Cake – Pastel de Cardamomo y Café
Several years ago, a Finnish friend gave me to try a very yummy drink: coffee infused with cardamom. She ground the coffee beans together with the cardamom seeds, and prepared it in a French press. It is a super fragrant drink with the characteristic flavor of cardamom. I love it! Since that day I became a big fan of this combination of ingredients.

I love spiced desserts and was ready to make it, but when I started reading the complete list of ingredients and realized that it also carried a good amount of coffee, I knew I had to try it as soon as possible.

I also noticed that it carries a good amount of orange zest, I had never tasted the combo cardamom + coffee + orange. After a few minutes in the oven, the kitchen began to smell so good. At that moment I knew that the cake was going to be delicious 😋.

The cardamom and coffee cake is super fluffy, crumbly and with a very soft texture. The taste of the orange predominates, accompanied by the unique and spicy flavor of the cardamom, and in the background you can appreciate the characteristic flavor of the coffee. A slice of this cake accompanied by a good cup of coffee, is a total delight 😍.
El pastel de cardamomo y café es súper esponjosito, desmoronadizo y con una textura muy suave. Predomina el sabor de la naranja, acompañado del sabor único y especiado del cardamomo, y en segundo plano se aprecia el sabor característico del café. Una rebanada de este pastel acompañado de una buena taza de café, es una delicia total 😍.
Cardamom & Coffee Crumb Cake

Instructions
Heat the oven to 200°C (400°F). Butter the bottom and sides of a 23×23 cm (9×9 inch) baking pan. Dust the pan with flour, tapping out any excess.
For the crumb topping:
In a medium bowl stir the flour, pecans, sugar, orange zest, instant espresso powder and ground cardamom. Add the butter and using your fingers or a spatula, mix everything together until it feels clumpy, not sandy, when gently squeezed between your fingertips. Reserve.
For the cake:
In a small bowl rub together the sugar and orange zest. Let it rest for 10 minutes.
In a large bowl, whisk together the flour, baking powder, salt, cardamom and instant espresso. Whisk the sugar-orange mixture.
In a medium bowl, whisk the butter, eggs, milk, coffee and vanilla extract until combined.
Pour the liquids over the dry ingredients and gently stir until just blended. Scrape the batter into the prepared pan and spread evenly.
Break up the crumb mixture with your fingers and sprinkle it evenly and generously over the cake batter.
Bake until the top is lightly browned, the cake springs back when lightly pressed in the center, and a pick inserted in the center comes out clean, about 30-35 minutes.
