Roasted Peaches with Chamomile Syrup
After the vacations I took a couple of weeks ago, I have been having a really hard time preparing and posting recipes for the blog. And now that I’m writing for two Mexicans blogs, plus my daily job, I feel a little bit overwhelmed with all the work! But I always try to find a recipe to share with you. This is the last Friday of March, and to celebrate spring, here is the recipe for some roasted peaches with a delicious chamomile syrup. Something I really like about spring is that, we can consume a great amount of delicious fruits. And also, because they are in season, we can get the most benefits from all their nutrients, vitamins and minerals. The other day, I found some chamomile flowers and some peaches that looked delicious. So I immediately thought about this recipe. Long ago, I made the same recipe, but since I had no fresh chamomile flowers, I used chamomile tea bags instead. The end result was not the best; the tea bags break up and the syrup was left with a lot of tea leaves, making it really hard to strain. What a difference using fresh chamomile flowers! In Mexico, fruits in syrup are very common, they make a quick and fresh dessert. Nowadays, most people buy them canned and ready to eat. But the syrup is made with corn syrup and glucose, and obviously you can’t add other flavors. If you like to make things from scratch and also enjoy trying new flavors, I recommend that you prepare your own syrup. These roasted peaches are a great dessert for a hot day, when eating a cake at the end of a meal doesn’t feel right. These peaches are really sweet, perfect for the persons with a sweet tooth.
- 4 peaches, halved and pitted
- 1 Tablespoon sugar
- ½ cup sugar
- ¼ cup water
- ¼ cup chamomile flowers
- ½ teaspoon vanilla extract
- Preheat oven to 220°C (428°F).
- In a baking sheet, place the peach halves cut-side up, and sprinkle sugar on top. Let stand 15 minutes.
- Bake for 15-20 minutes, or until cut sides are caramel-colored and golden.
- In a small heavy saucepan cook sugar and water over low heat. Leave on the heat until the sugar is completely melted. Add the chamomile flowers and the vanilla extract. Leave on the heat for 10 more minutes. Remove from heat. Discard the chamomile flowers.
- When ready to serve, place the roasted peaches halves in individual
- Drizzle with the chamomile syrup.
- Enjoy!
- You can serve warm or cold
