Whole Grain Granola with Cranberries
I loveeee this granola recipe! It’s super delicious and full of healthy ingredients. Since I discovered homemade granola, I’ve never bought back commercial granola. Besides the fact that you can choose all the ingredients, it can be stored in air-tight containers for months with losing its crunchiness. One of the things I like when I make this granola, is the aroma it leaves in my house. Mmm … yummy! It’s the smell that prepares you for what you are about to eat. Plus I love that all the ingredients I put on it are super healthy and heart healthy whole grains; full of fiber, antioxidants and healthy fats like omega-3 fatty acids. This batch of granola was prepared specifically for the bridal shower my mom threw to me last Saturday. (I had a great time, thanks mom!) She prepared a breakfast buffet table where she put fruit, natural yogurt and granola. And while many people doubled their granola portions, we still have a large jar of granola. For me it is a delicious snack, the truth is that I can eat by the spoonful, without adding anything to it. Although sometimes it stuck in my throat and I start coughing like crazy. If you want to keep the granola as a healthy snack, just make sure that you stick to the recommended daily portion and that you are topping it with healthy products.
- 270 grams old-fashioned rolled oats (not instant or quick cooking)
- 200 grams wheat germ
- 60 grams unsweetened shredded coconut
- 3 Tablespoons sesame seeds
- 40 grams sunflower seeds
- 50 grams chopped pecans
- 50 grams chopped almonds
- 50 grams puffed amaranth
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- ¾ cup canola oil
- ¾ cup honey
- 2 teaspoons vanilla extract
- ½ cup dried cranberries
- Preheat oven to 180°C (350°F). Line two baking sheets with parchment paper.
- In a large bowl mix the oats, wheat germ, coconut, sesame seeds, sunflower seeds, pecans, almonds, amaranth, cinnamon and salt.
- In a small bowl whisk together the oil, honey and vanilla. Pour the honey mixture into the oats mixture and mix thoroughly until all of the ingredients are wet.
- Pour the mixture onto the prepared baking sheets and spread in an even layer. Place into the oven and bake for 30-35 minutes, or until the granola is golden-brown, dry and hardened slightly. Remove the baking sheets and stir the granola with a rubber spatula several times to ensure even browning.
- Let cool completely and then add the dried cranberries. Distribute them evenly.
- Store in air-tight containers up to 3 months.
